Cherry-pick of the Xcode 27 fixes from
feature/DOC-16522-xcode27-adoptiononto the revision pinned byrelease/pdfexpert-next.iOS deployment target switched to 16, then raised to 17 — unit-test targets build with an iOS 17 minimum on Xcode 27.
