Update data logging setup screen layout

Uses the newly enhanced UiStack from ui-controls to layout each row of this screen in it's own centered row, with labels over each.

Smaller changes that came with it:

• The "Done" button no longer has a focus label.
• liveSensorGraph.ts needed a small update for the new API shape.
• Added strictNullChecks: false to tsconfig.json. Existing code wasn't doing strict null checks, resulting in type errors.
