Pi 5.0.0 sometimes follows the OS default, but other times not. Often it seems to take a restart of the app to get it to behave, but after several switches, it gets stuck on one and there doesn't seem to be a way to get to the right one. This is in the case of switching between MacBook speakers and AirPods Pro.
